extra virgin olive oil is oil from the first time the olives are pressed and is more flavorful than regular olive oil. Yes, it is edible! It is a healthy oil with essential fatty acids. This oil is used in a lot of italian dishes.What is virgin olive oil and double virgin olive oil?
Extra virgin olive oil (evoo) is made from the first pressing of the olives and is the highest quality, best tasting oil. Virgin comes from the next pressing and is not quite as good in quality. They are both edible.
never heard of double virgin olive oil (in fact I'm quite sure it doesn't exist) . . but virgin olive oil means the first pressing of the olive, they press the olive a second time for generic olive oil, which you're better off using for cooking . . virgin olive oil imparts a very heavy flavor, and is more for using cold on salads and carpaccio
